Why doesn't our kimbap contain danmugi (yellow picked radish)?
Danmugi on the market today, unfortunately, is no longer made by the traditional methods of fermentation using only herbs, vinegar, and sugar. Mass manufacturing processes have brought in harmful additives such as aspartame and food coloring, such as Yellow No. 5. So instead of danmugi, we use our own homemade pickled white radish as a replacement. Sure, the color isn't as festive, but we would rather sacrifice the visual appeal for the quality of our food! |
